One Crust Pie

Apples are everywhere right now so here's an easy one crust pie/tart you can make fast
and is really really good.  You can make this same recipe using any fruit you like.  I made it last night and used apples from an obliging tree.


One Crust Fruit Pie.

1 frozen pie crust thawed, unfolded and rolled out flat
3-4 cups sliced apples (or other fruit)*
1/2 cup sugar (depending on the tartness of the fruit)
1/4 teas. salt
1 teas. cinnamon
1/2 teas. nutmeg
1 tbspn. butter cut in small pieces

Toss sliced apples together with sugar, salt, cinnamon, nutmeg.  Place pie crust round on cookie sheet or pizza pan lined with parchment paper and spoon apple mixture in center of crust.  Dot with butter and carefully pull crust up around apples (see picture) but do not tear crust.  You can "pleat" or fold the crust up around apples.  Sprinkle with a bit of sanding or regular sugar and bake at 400 for about 40 minutes or until filling is bubbling and crust is brown. 

*you can use more or less fruit depending on your taste...this recipe is easy to adapt to your own liking.  Peaches, cherries, blackberries all work well or you can use a mixture of several fruits.
