Fruit Galette


With summer in full swing, fruit and all sorts of berries will be available soon if they are not already in your area.  I found this recipe at Three Many Cooks for a berry galette which is really just an easy tart with a yummy sweet filling.

Fruit Galette

1 8 oz. package softened cream cheese
1/2 cup 10 x sugar
3 T cornstarch (divided)
1 egg separated
2 cups prepared fruit (see below)
2 T sugar (and a little extra for sprinkling)
1 t. vanilla extract or 1/2 t almond extract
1 refrigerated pie crust

Adjust oven rack to lowest position and preheat oven to 400.
Mix cream cheese, confectioner’ sugar, 2 tablespoons of the cornstarch, and the egg yolk.   In a separate  bowl mix fruit*, 2 tablespoons of sugar, remaining tablespoon of cornstarch, and vanilla or almond extract.
Unfold pie dough on a lightly floured surface and roll to about 13-inches in diameter. Slide onto a cookie sheet or pizza pan and spread evenly with cream cheese mixture, leaving a 2-inch border. Scatter fruit evenly over cream cheese mixture. Fold pastry border over the fruit. Brush dough perimeter with egg white and sprinkle with a little sugar. (sanding sugar is good if you have it)
Bake galette until golden brown and bubbly, about 30 minutes. Loosen with a metal spatula and slide onto a wire rack to cool slightly. Serve warm.

*  use berries, peaches, pears, plums or any other mixture of fruits you like.
